Tasting Notes for Derrière le Mont Aigu N°13 Chouilly Grand Cru Blanc de Blancs Extra Brut 2013 by Pertois-Lebrun

Colour & Appearance
Luminous, cool pale gold with fine, persistent streams of rising bubbles.
Nose
The nose reveals an uncompromisingly purist picture: cool chalky notes meet citrus zest, crisp green apple and subtle nuances of toasted brioche crusts alongside light smoke.
Palate
Bony, razor-sharp and electrifyingly lively. On the palate, this Blanc de Blancs reveals a steely structure, carried by focused acidity and the pure minerality of the Grand Cru soils. The low dosage allows the Chardonnay to shine unfiltered, whilst the extended lees ageing provides the necessary texture and richness.
Finish
A long-lasting, saline finish that lingers with great drive, lemon zest and chalky depth.
Terroir & Origin
The wine hails from the single vineyard behind Mont Aigu in the Grand Cru village of Chouilly in the Côte des Blancs. The deep chalk soils impart a sharp, transparent coolness and immense energetic tension to the Chardonnay.
Grape Variety & Vinification
100% Chardonnay from the 2013 vintage. In the cellar, the estate relies on restraint: plot-by-plot hand selection, long maturation in stainless steel or oak, and years of lees ageing lend this Extra Brut its radically honest style.
Food Pairings
Outstanding with oysters, seared scallops with lemon, or delicate wild salmon sashimi.
Key Features
A single-vineyard Champagne from the grower Champagne movement that captures the pure essence of the Côte des Blancs through artisanal hand-riddling and a strict refusal to employ cosmetic cellar techniques.
