Wine Description for Derrière le Mont Aigu N°13 Chouilly Grand Cru Blanc de Blancs Extra Brut 2013 by Pertois-Lebrun

Colour & Appearance
Luminous, golden yellow with delicate green reflections. The perlage is fine and persistent – a classic expression of mature Blanc de Blancs Champagne from a Grand Cru terroir.
Nose
The nose displays impressive precision and depth. Ripe yellow pear and white peach combine with notes of toasted brioche and fresh butter. Beneath lies a cool, almost chalky minerality, unmistakably pointing to the chalk-rich terroir of Chouilly – complemented by a hint of white flowers and ripe citrus zest.
Palate
On the palate, this Champagne unfolds with great tension and energy. The texture is creamy yet taut, supported by vibrant acidity that gives the wine backbone and length. Aromas of yellow apple, mirabelle plum and almond are threaded through with a deep, saline chalk minerality. The Extra Brut dosage allows the fruit to speak clearly, without any overloading from residual sweetness.
Finish
Long, precise and characterised by mineral intensity. The finish closes with a fine limestone note that lingers long after the final sip – a hallmark of exceptional terroir expression.
Terroir & Origin
The grapes come exclusively from the Grand Cru village of Chouilly in the Côte des Blancs – one of Champagne’s finest Chardonnay terroirs, shaped by deep chalk soils that give the wine its characteristic minerality and cool freshness.
Grape Variety & Vinification
Pure Chardonnay from old vines being converted to organic viticulture. Maturation depending on the cuvée in stainless steel, wood or sandstone amphorae – a craft-driven approach that prioritises complexity and authenticity.
Food Pairing Recommendations
An ideal companion to oysters and fine seafood platters. Excellent also with scallops with beurre blanc, lobster or an elegant truffle risotto. As an aperitif simply unbeatable.
Special Features
The „Derrière le Mont Aigu“ is a single-vineyard cuvée from the family-run house Pertois-Lebrun, which for five generations has produced exclusively Blanc de Blancs Grand Cru. Brothers Clément and Antoine embody a new generation that unites tradition and precision with ecological consciousness.
