Tasting note from from 30.12.2020, Copyright Peter Müller

The Chemins des Terroirs is an excellent business card to get to know the purist style of the house. A cross-section of the different sites is presented in this wine within a classic blend of 50% Chardonnay, 30% Pinot Noir and 20% Pinot Meunier.

Color

The wine shows itself clear and shiny in the glass with a joyfully rearing, only slowly receding foam crown and small-bubbled perlage in light white gold.

Nose

Densely interwoven and multi-layered, the aromatics of this cuvée of Chardonnay, Pinot Noir and Meunier captivate. A pleasant scent of freshly baked croissants, shortcrust pastry and shortbread tickles the nose. This is joined by unobtrusive fruit and floral aromas. Physalis, peach skin and yellow pear are refreshed by some kumquat zest. The fragrant lightness of lemon verbena, basil and Nana mint add herbal freshness to the enticing overall picture, while nutty notes of pecans again ground.

Palate

The refreshing jump into the cool water after a hot sunbath;

...then tickle and pull through...

Teasingly caressing, the delicate and balanced, yet at the same time vitalizing perlage of the Chemins des Terroirs Brut of the De Sousa family prances the palate. The citrusy freshness of the nose is reinforced by a tense arc of acidity. With 7g dosage per litre, this champagne gets its grounded structure and reverberating length as well as the range and pleasantness of a cavalier tone through minerality chiseled in stone.
