The vineyard has been certified organic since this vintage. 100 % Savagnin grapes were hand-picked and fermented spontaneously in both oak barrels and temperature-controlled stainless steel fermenters. The ageing took place in used oak.
Color
light golden yellow
Nose
The En Guille Bouton in 2021 again offers a fragrant and fresh nose reminiscent of yellow pears and pear quinces, green and yellow apples as well as some stone fruit and lemons. On top of that, there are notes of hawthorn and lanolin, which brings the fragrance a bit close to a Chenin Blanc from Anjou.
Palate
On the palate the En Guille Bouton silky and elegant. Here it becomes clear that it is not Chenin, but Savagnin; because the acidity is directly present and remains on the tongue for a long time. At the same time, it seems mature despite its crisp presence and nervousness. The 2021, whose bright fruit mixes with almond notes and rock, seems finer and more delicate than the previous vintage and has excellent length and intensity on the finish.
