In the glass

  1. Colour

  2. Nose

Fine notes of citrus fruits, green apple and white peach, accompanied by floral hints and a cool, stony minerality.

  3. Palate

Lean and precise on the palate, with taut acidity, pure fruit and a long, mineral-driven finish.

  4. Character

A Riesling of crystalline clarity and filigree structure – designed for finesse and longevity rather than power and extract.

  5. Pairing

Ideal with Wiener Schnitzel, steamed river fish with herbs or fresh asparagus dishes.

  6. Notes

From Austria’s oldest winery, built on Roman foundations dating back to 63 BC – Demeter-certified since 1971 and thus a pioneer of biodynamic viticulture; spontaneous fermentation in large Slavonian oak casks shapes its refined, age-worthy style.

Tasting note

Character
A Riesling of crystalline clarity and filigree structure that captures the Wachau style of Nikolaihof to perfection: elegance rather than concentration. With a moderate 12 per cent alcohol, it presents itself as slender, precise and with remarkable inner tension. The aromatic profile ranges from citrus fruits and white peach to a cool, almost saline minerality that speaks of the stony terraces of the Wachau.
Terroir & Origin
The Wachau is one of Austria’s most renowned wine regions, and Nikolaihof is its historic heart: the oldest winery in Austria stands on Roman foundations dating back to 63 BC. The Saahs family has cultivated this extraordinary site since 1894, farming it biodynamically according to Demeter since 1971 – as the country’s first certified estate. The vines thrive on stone terraces where wild herbs grow and bees hum between the rows. This biodiversity can be tasted in every glass.
Grape variety & Vinification
Riesling finds conditions in the Wachau that bring out its fine acid structure and aromatic potential to full effect. At Nikolaihof, the musts undergo spontaneous fermentation in large Slavonian oak casks – a process that demands patience and yields wines of phenomenal inner structure. Maturation in large wooden casks is the hallmark of the estate; some wines age here for a decade or longer. The result is Rieslings of astonishing longevity and depth.
Food recommendations
The vibrant acidity and mineral signature make this dry Riesling an ideal partner for steamed river fish, Wiener Schnitzel of veal or Asian dishes with lemongrass and ginger. It also reveals its strengths alongside asparagus with hollandaise sauce or a selection of Austrian cheeses. Its slender body and delicate spice are equally well suited to sushi and light summer dishes.
