Info

The 2021 Colli Tortonesi DOC is made from 100% Timorasso. Selected sites from the municipality of Monleale Alto in the northern part of the appellation are used here. The plots are orientated towards the south-east and south-west and stand on blue marl-limestone soils, known here as Marne di Sant'Agata.

The grapes were harvested manually in mid-September and completely destemmed. Overnight cold maceration followed before gentle pressing. Very slow fermentation of just under four weeks in individual batches. Most of the wine is fermented in ceramic tanks, some in stainless steel and large wooden tanks. Malolactic fermentation is avoided. Ageing on the fine lees for around ten months also takes place in the same containers. The fine lees are repeatedly brought into contact with the wine by means of battonage, i.e. stirring.

Nose

Timorasso simply delivers an enormously exciting nose full of variety time and time again. Quince, pear and yellow apples lead the way. Bitter almonds and chopped pine nuts. Dried camomile flowers and white tea slowly but surely make their presence felt. A little white pepper provides a pleasantly subtle flavour. Oregano, mint and eucalyptus provide plenty of freshness. Bergamot zest and kaffir lime leaves are suddenly omnipresent. It always comes across as serious, earthy and above it all. A very mature wine.  

Palate

Dense and compact on the palate. It has an enormously tight structure. The fruit recedes into the distance. It lives much more from this appealing texture and fine bitterness. Its elegance and coolness skilfully counteract this. The aromas of tea, and above all its ethereal nuances, clearly characterise the finish.
