Our Syrah comes from three unique terroirs - Condrieu, Verin and Roussillon, characterised by diverse soil types ranging from alluvial alluvium, robust granite to glacial till. The Jules Chauvet method was used to produce the Syrah: a 24-hour cool pre-fermentation followed by a ten-day cool carbonic maceration and eight months of ageing in cuve. This wine has not been filtered, fined or sulphured.
Semi-transparent purple, saturated with violet elements.
Invigorates the senses with a bold expression of dark berry, captured in a radiant scent of mint and violet. Mounds of juicy blackberry, full-bodied elderberry and a hint of cassis resonate, complemented by subtle hints of crushed stone and liquorice.
Lively and youthful on the palate, almost buoyant - our Syrah character. A driving acidity danced around by silky soft tannins. Unleash flavours of fresh mint, iodine, liquorice and black olives, underpinned by grilled herbs and ripe, dark fruit.
Try it with a hearty stew of homemade rabbit, olives and porcini mushrooms, a terrine crown jewel of guinea fowl complemented by fruity cranberries or a simple, crunchy salad of beetroot, caramelised walnuts and the delicate melt of goat's cheese.
