Wine Description for Syrah Entrevon VdF 2020 from Saint Jean Du Barroux

Colour & Appearance
Lightly transparent violet – a wine that visually reveals its youth and freshness without denying the dark intensity of classic Syrah wines.
Nose
Initially yeasty and fruity at once – like fresh plum cake straight from the oven. The young wine demands air, then fleshy, dark fruity notes of cassis and cherries unfold. These are joined by dark chocolate and black olive tapenade, whilst a distinctive note of hung beef lends the whole an almost animalistic depth.
Palate
Here the true class of this Ventoux Syrah reveals itself: impressively balanced between freshness and ripeness. The tannin presents itself partly fine-grained, yet retains a robust side. Vibrant acidity meets warm, dark fruit – forest berries, plums, cassis, a few cherries, plus peat and violets with a hint of olive tapenade. The character: powerful yet elegant, juicy and meaty.
Finish
Deep and persistent with lingering dark fruity notes and a pleasant tannin structure that promises further development potential.
Terroir & Origin
The Entrevon parcel lies in Malaucène at 350 metres on the north-facing side of Mont Ventoux. The bedrock dates from the third period of the Miocene with sandy soils – a cool location that gives the wine its remarkable freshness.
Grape Variety & Vinification
Pure Syrah, hand-harvested on 9 September 2020, 90% destemmed. Twelve days of fermentation in concrete vat, followed by eleven months ageing in stainless steel and nine months bottle age. Only 1,581 bottles produced.
Food Pairing Suggestions
Estouffade d’agneau (lamb stew), squid with chard and olive filling, broad beans with artichokes and black olive tapenade – Mediterranean cuisine with substance and character.
