Wine Description for Sitta Maceracion 2021 by Attis Bodegas y Vinedos

Colour & Appearance
Luminous golden yellow with orange reflexes – brilliant and clear, a visual hint at the 15-day skin contact that gives this Albariño its distinctive depth.
Nose
Bewitchingly complex: orange blossom, blood orange and bitter orange dominate with Moorish flair. These are joined by apricot, mirabelle plum and ripe peach. The spice spectrum ranges from saffron and turmeric through cinnamon to clove and cardamom – an aromatic journey to Andalusia, carried by the cool finesse of Albariño.
Palate
Crystal-clear and precise. Fresh orange juice meets yellow stone fruit, whilst a fine, silky tannin lends the wine subtle structure. The restrained acidity ensures elegant drinking flow, a light bitter note perfectly balances the fruit fullness. Not a trace of off-flavours – just pure, focused fruit expression with tactile dimension.
Finish
Medium-length with lingering orange notes and fine spice. The subtle astringency leaves a pleasantly grippy impression that invites the next sip.
Terroir & Origin
From Rías Baixas, the heartland of Albariño. The 35-40 year-old vines grow in traditional pergola training on granite soils with sand and clay topsoil – only 800 plants per hectare, resulting in concentrated, characterful grapes.
Grape Variety & Vinification
100% Albariño, completely destemmed. Spontaneous fermentation in steel tank with 15 days skin contact – the cap is punched down twice daily. After malolactic fermentation, the wine ages for six months on fine lees. The result: an orange wine that combines approachability with complexity.
Food Pairing Suggestions
Risotto alla Milanese, Oriental seafood stew, grilled pointed cabbage with curry sauce. Generally with spiced fish dishes, North African tagines or mature hard cheese.
Special Characteristics
An ideal introduction to the world of skin-contact fermented white wines – never extreme, always balanced. Attis demonstrates here that skin contact need not polarise, but can lend the Albariño an additional sensory dimension without sacrificing its Atlantic freshness.
