Sitta Maceracion is based on the autochthonous grape variety Albariño. The vines are between 35-40 years old and are traditionally cultivated there using the pergola method. There are only 800 plants per hectare. The soils are mainly granite, but with a layer of sand and clay, which leads to very good drainage.
After the harvest, the grapes are completely destemmed. The alcoholic fermentation takes place spontaneously in steel tanks. The must is left on the skins for 15 days and the oxidation potential is reduced twice a day by punching down the marc. After pressing the must in a pneumatic press, malolactic fermentation takes place. The wine then matures on the fine lees for another six months in steel tanks. It is clarified and filtered, which explains its clear and brilliant colour.
The aim is never to go to extremes with this wine. It is about the clear and precise expression of the fruit, which is extended by a sensory-haptic level.

Bright golden yellow with orange and light reflections
Nose
The Albariño from 2021 is fermented on the skins and has an intense aroma. Oriental spices such as cinnamon, saffron and turmeric are just as much a part of the mix as yellow stone fruit. Mirabelle, apricot and ripe peach. Above all, however, it lives on orange peel and blossom. Bitter oranges and blood oranges also fit wonderfully into the picture. The nose is rather reminiscent of Moorish Andalusia. The Albariño shines here with its cool finesse and intense fruit. Clove, cardomom and juniper are added from the spice cupboard. It is absolutely clean and irritated without notes of fermentation.
Palate
Already on the nose, it confirms the image of the nose in an impressive way. Crystal clear and precise, it opens on the palate. The yellow and above all orange fruit comes to the fore in the best possible way. Orange juice in the best way. A very fine tannin brings the palate to life with a little tension. The acidity is restrained, but provides a good drinking flow. The slight bitter tone offers a wonderful counter to the fruit. Without being too demanding, it knows how to inspire. Especially for beginners in the category of mash-fermented white wines, this is a good example to break with possible barriers.
