The expansive and southward sloping hillside of Le Paradis reveals a terraced landscape, strewn with Oxford limestone and covered with delicate overbuilding clay. This idyllic vineyard is located barely two kilometres south of Sancerre and is home to magnificent Sauvignon Blanc vines that are over 40 years old. After fermentation, the wine is left to develop in Stockinger barrels for about ten months.
The colour of this wine reflects a graceful medium straw yellow. On the nose, the 2021 Sancerre Le Paradis embodies a refreshing and clear expression of Sauvignon Blanc, whose main accents are lost in green and white notes, between elderberry, boxwood, lime and spicy green apples. These base notes are subtly refined with hints of fennel, petrichor and rock.
On the palate, Le Paradis is softer and smoother than expected and presents itself with a full-bodied, fruit-driven note. Despite this gentle expression, the wine cracks and shines with its straightforward and bright nature. Juicy flavours of cassis, gooseberry and elderberry dance on the tongue with a slight hint of extract sweetness, before finishing on an iodine-salty, full-bodied and long finish.
