Information about the drink
This noble wine from the Guigne-Chèvres vineyard is situated on a gently sloping hillside with a northeast exposure. Red clay on caillottes, a limestone layer rich in marl coating from the Jurassic period, characterises the soils. The vines, which are almost forty years old, are carefully tended and after the harvest the wine is aged for ten months in Stockinger barrels, using the yeast.
Color
The pure straw yellow of the wine is a real feast for the eyes.
Scent
The Guigne-Chèvres stands out from the 2021 Sancerres single vineyards - as the most subtle and noble wine of the vintage, but also the most complex and restrained. It retains the expressive green notes that characterise the vintage, but also offers more. Among other things, stone, salt, iodine and oyster shells underlined by a warm note of white-fleshed stone fruit.
Taste
On the tongue, the Guigne-Chèvres exerts a powerful pressure, full of tension that flows through an energetic body. A hint of sweet stone fruit mixes with abundant elderberries, herbs and limes, as well as apples and green pears. These are joined by salt, a pinch of pepper, kitchen herbs and fresh fennel greens. The wine maintains that impressive tension and strength until the extended finish, impressively showcasing the cool 2021 vintage, a rarity in Sancerre.
Culinary recommendations
This wine goes perfectly with a bulgur salad with fresh fennel, goat cheese and Moroccan mint. But also a Breton-style lobster or smoked eel served with young artichokes, nettles and a beurre blanc harmonises perfectly with the complex flavour profile of the Guigne-Chèvres.
