Wine overview
The unique Sancerre Chambrates, whose origins are near the Le Paradis wine region, grows on an eroded plateau with a southern exposure. Characterised by shallow and organic clay topsoils rich in the Caillottes, a type of Oxford limestone from the Jurassic period. The charm of this wine develops in a combination of Stockinger barrels and barriques, where it is matured and refined for 10 months.
Color
Fresh, bright straw yellow.
Bouquet
The latest vintage of Sancerre Chambrates fits seamlessly into the Vacherons portfolio and is characterised by a strong presence of green fruit notes, including apple, gooseberry and blackcurrant. A typical feature are individual yellow fruit notes such as kumquats and apricots, which blend subtly and form a harmonious whole with notes of herbs and stone as well as flowers and a hint of oats.
Taste
On the palate, Chambrates is initially more balanced and elegant than its counterparts Le Paradis and Les Romains. However, the acidity increases in the course of the enjoyment and the minerality breaks through the green fruit character in an electrifying way. There is a certain extract sweetness and bitterness, comparable to Bitter Lemon, but less pronounced. The Chambrates pulsates with tension and shows an athletic elegance as well as an intense green fruit aroma - just like the classic Sancerre wines from previous years. In terms of a successful comparison, one could say that this wine combines the essence of Le Paradis and Les Romains.
Culinary recommendations
The melodious Sancerre Chambrates goes well with spicy shakchuka with leeks and goat yoghurt labneh, refined with za'atar and salt lemons. A raw marinated asparagus salad with morels or a crustacean kebab rounds off the taste experience in a first-class way. Alternatively, you could consider a grilled white fish with fresh summer herbs or chicken breast with a fruity curry sauce. Enjoy the Chambrates according to your personal taste and let yourself go on a sensory-expanding journey.
