Wine information
The heart of the Champ de Cour vineyard in Moulin-à-Vent is a 1.2-hectare piece of land owned by the Chastels. This paradise for the noble Gamay noir à jus blanc, as the geeky wine connoisseur calls it, lies to the south-east of the town centre, on soil characterised by deep granite weathering and archaic alluvial plains. After being carefully harvested and sorted by hand, this roughly fifty-year-old strain, which yields between 25 and 35 hl/ha, thrives through a semi-carbonic fermentation process before being aged in cement vats for a year.

The olfactory signature conjures up images of an exquisite basket of red and dark fruits such as sour cherries, raspberries, blackberries, plums and pomegranates. This fruity canon is complimented by fine-grained notes of orange peel, liquorice, Assam tea and violet candy, creating an almost hypnotic olfactory experience.
