- The nose immediately reveals the artisanal finesse of the maturation: toasted hazelnuts and subtle roasted notes meet juicy apricots, orange zest and floral accents of acacia and lime blossom. Beneath lies a mineral layer reminiscent of wet stone – typical of these South Tyrolean vineyard sites. With air, notes of quince in brown butter and stone fruit kernels develop, a complex aromatic profile signalling depth and ageing potential.

- On the palate, the Sophie reveals its most seductive side: creamy texture with delicate suppleness and a characteristic, slightly beeswax-like extract sweetness on the attack. The fruit is precisely defined, perfectly balanced by skilful oak integration. Delicate saline notes and nutty character provide structure and length. Already hedonistic and accessible in its youth, yet one senses: there is much more hidden here.

- A fascinating connection of two terroirs: The warm hillside site Lieben Aich in Terlano (300 m, clayey sandy soil with weathered porphyry) meets the extremely steep vineyard Mazzon in Caldaro (350-400 m, up to 100% gradient, calcareous clay soil). This combination gives the Sophie its unique tension between opulence and freshness.
- Grape Variety & Vinification
- Cuvée of 94% Chardonnay, 4% Viognier and 2% Sauvignon Blanc. Hand-harvested in early September, four-hour maceration for aromatic depth, spontaneous fermentation with indigenous yeasts in oak vessels of varying sizes. Nine months‘ maturation on fine lees – classic craftsmanship at the highest level.

- Pan-seared scallops, lobster in butter, veal sweetbreads, risotto with porcini mushrooms, aged Comté or Parmesan. The Sophie also harmonises beautifully with roasted monkfish or guinea fowl breast in cream sauce.
