Wine details:
Our bubbly companion is a pure Sauvignon Blanc grown in 2010 in an organically farmed vineyard in Caudiès-de-Fenouillèdes, characterised by its unique blend of clay, limestone and a hint of slate. The grapes were harvested exclusively by hand and produced about 30 hl/ha. The grapes were then fermented spontaneously on the skins for 15 days. The resulting wine was pressed and placed in a concrete tank to mature. Finally, the wine was bottled without any beauty or filtration, just a pinch of filling sulphur.
Colour note:
This wine presents itself in a light copper hue, clearly clearer than in the previous season.
Fragrance profile:
This orange-coloured white wine, fermented on the skins, has faint hints of crumbly apples with their skins, pure blueberries, broom, hay and yeast. Although it is fermented and matured in concrete, it makes you think of amphorae. With a little warmth, it also unfolds aromas of acacia flowers and fine honey.
Taste:
On the palate, the orange Sauvignon Blanc is tangy and clearly shows the intensity of its maceration through the presence of tannins and phenols. One can detect notes of apples and apple peel, herbs, a hint of ginger and liquorice. The acidity is silky and fine, at the same time invigorating and sustaining.
Food recommendations:
- Strong salad of fennel and orange, served with rustic house bread and a little olive oil.
- Lightly fried spring peas and courgettes, enriched with a mixture of white wine vinegar and garlic, served with sardines.
- Delicious aubergine hummus garnished with feta and olives.
