Tasting note
Color:
With a very active perlage of medium size, a rich lemon yellow colour with clear red-golden reflections shines from the glass
Nose:
The nose is initially inviting and open, with fruity and spicy aromas standing out. The wine also clearly shows the traces of its origin. It appears dark, chalky and linear. You seem to be able to perceive the stones in the subsoil here. Underpinned with spice, it shows us rosehip, sour cherry and redcurrant. I would describe the spice as cinnamon, clove and red pepper. Fresh herbs are added in an invigorating way. The flavours of dried herbs add a further dimension. Sage, mint, parsley and marjoram are the notable representatives here. Its yeasty side is still a little in the second row. Very perceptible, but much less prominent due to its stony structure.
Palate:
It is immediately convincing on the palate. It runs straight as a die and literally shaves the palate. Its powerful acidity structure paves the way. The melting mousseux clings to the acidity and is drawn in here. Mousse and acidity are on an equal footing here. As soon as these two clear the field, there is room for its clear, mineral structure. With corners and edges. Elegant and cool. The fruit and herbal spice then come to the fore again in the finish.
Food pairing suggestions
- Fried monkfish with steamed sugar snap peas and Madras curry foam
- Escabeche aspic with sardine, bouchot mussels and dill
- Terrine of rabbit and celery and mixed leaf salad
