Sparkling Mandarin with Salmon Red Reflections
Nose
Intense, warm, Mediterranean sounds flow from the glass. Dried thyme and marjoram dominate the moment. Toasted hazelnuts and almonds give it depth and seriousness far from fruit. Ripe pears, caramelised quinces and apricots are not superficial but clearly visible. Discreetly, Blanco Malvar is reminiscent of baked apple with marzipan. Short pastry and warm butter croissants give off pleasantly benevolent emotions. A little turmeric and saffron whirr very faintly in the background.
Palate
2020 Blanco Malvar from Jiménez-Landi combines the strengths of this region very well. The granitic soils at these altitudes create a stony, even salty impression. The cool nights give the acidity time to develop and establish itself. Although at a moderate level in our latitudes, the acidity noticeably leaves its mark on the wine. The ripe fruit - caused by the hot days and the long, dry summer - shows itself in the form of exotic to oriental aromas. A rather ideal food companion that can act far away from primary fruit.
Food recommendations from Marian Henß
- Sea bass roasted on the skin with cauliflower from the oven and curry beurre blanc
- Corn chicken breast with white beans, fregola sarda and bacon foam
- Grilled parsnips with balsamic glaze and lollo rosso salad
