Champagne Jèrôme Blin is located in Vincelles in the Marne Valley and has a family history in viticulture dating back to 1671. The organically certified estate covers six hectares, of which 70% are planted with Pinot Meunier and 15% each with Chardonnay and Pinot Noir.
La Varoce is 93% from 2019 and was dosed with 7 grams of Extra Brut in March 2020. The vines for this champagne are around 35 years old and grow on silty limestone, a speciality of the Marne Valley with a south-south-west orientation. The base wines are harvested by hand and fermented in steel.
The cuvée of 80% Meunier and 20% Chardonnay was disgorged in December 2022, only 2500 bottles were produced.
Color
Strong straw yellow colour with delicate reddish notes and fine perlage.
Nose
The 2019 La Varoce Extra Brut from Jérôme Blin is expansive and powerful, with biscuits and rye sourdough bread crust, followed by crunchy red apple, vanilla croissants, dried apricots, salted almonds and hazelnuts outlining the first nose. Linseed, savoury biscuits, salt-buttered toast and nuts again turn the wheel into a circle.
Mouth
It opens on the palate with ripe, crunchy red fruit of pomaceous fruit such as apples and ripe quinces, fuelled by a fine, sparkling mousse. Juicy and tart with fine yeasty and pastry notes, it is aromatically calibrated for autumn, the seven grams finely integrated into the arrangement of pastries and jam or compote. A tiptop, impeccable champagne for any occasion from Monday morning to Friday afternoon.
