Colour & Appearance
Pale golden yellow with delicate rosé-tinged reflections. The perlage displays itself lively and fine-bubbled – a visual foretaste of the elegance of this Champagne.
Nose
Impressively purist: The Éclats de Meulière opens with pronounced limestone minerality and the freshness of sea breeze. This salty, stony base note is accompanied by precise fruit aromas – lemon, green apple and white peach in perfect balance. Nothing feels overdone, everything breathes clarity.
Palate
Taut, slender, almost athletic – this is how this Champagne presents itself on the palate. The salty minerality dominates initially, followed by fine citrus notes and subtle red berries. The texture is remarkable: a silky-fine mousse that enlivens the palate without dominating it. Almost dance-like in its mobility – more lively and energetic than earlier vintages.
Finish
Long, refreshing and characterised by persistent minerality. The citrus freshness remains present, whilst salty notes linger and invite the next sip.
Terroir & Origin
The 45-year-old vines are rooted in shell limestone and flint – soils that lend this Champagne its characteristic mineral tension. The terroir speaks here more clearly than in many industrially produced Champagnes.
Grape Variety & Vinification
Unusual assemblage with 60% Pinot Meunier, 30% Pinot Noir and 10% Chardonnay. Following hand-harvesting, spontaneous fermentation took place – one quarter in wooden barrel, three quarters in steel tank. With only 3.5 g/l dosage, a true Extra Brut that obscures nothing of the terroir.
Food Pairing Suggestions
The salty minerality makes it ideal for oysters, scallops or sashimi. Also an excellent choice with smoked trout, goat’s cheese or simply Beluga lentils with crème fraîche.
