Wine information
A Chardonnay from various vineyards of the Domaine, which is now officially certified organic, as certification was finalised in 2021. 100 % of Chardonnay grapes were harvested by hand and fermented spontaneously in oak barrels after destemming. The wine was matured in oak barrels for several years.
Color
Light golden yellow with green-golden reflections
Nose
This is an open and inviting Chardonnay with notes of ripe yellow apple, some pear, apple tart with whipped cream, some rock, hawthorn and cinnamon bark.
Palate
On the palate, the wine is juicy with a few tart vin-de-voille notes and the corresponding nuttiness. It is less opulent on the palate than expected, but pleasantly firm, dry, tart, slightly oxidative, very juicy and salty with a savoury bitter note on the finish.
RECOMMENDATIONS WITH WINE cold starters, seafood, shellfish, mussels, moules marinières, fish in white sauce
Food recommendations by Christoph Raffelt
