Wine information
The vineyard had been in conversion to organic viticulture since 2018. This was completed in 2021. 100 % Savagnin grapes were harvested by hand and fermented spontaneously in both oak barrels and temperature-controlled stainless steel fermenters. Ageing took place in used oak in the cellar, where the Vin Jaune is also stored. The barrels were not refilled, so that a layer of flor formed on the wine.

Nose
The Savagnin vin de voile 2017 is a classic intense Jura Savagnin with clear notes of green walnuts, earth, salt lemons, but also with notes of long matured Parmigiano Reggiano - in other words, proper umami.
Palate
On the palate, the oxidative Savagnin Electrifyingly fresh and clear with the acidity so typical of the variety, which appears laser-like precise and yet ripe and silky in its own way. The wine is less oxidative, green-nutty and earthy on the palate than on the nose. It offers an impressively elegant texture, again juicy citrus and tart citrus notes, lots of salt and some yeast. It is quite successful, especially with the classic dishes of the region.
