Wine information
Asphodèle is the first dry white wine in the history of Château Climens. It is a wine made from 100 % Sémillon from red clayey sand and limestone and thus from the unique terroir of Climens. It has been produced biodynamically since 2010 according to demeter-certification. Around 45 hectolitres per hectare were harvested. The vines are around 15 years old and were planted at a density of 6,000 per hectare. The wine was matured for nine months in cement tanks.
Color
Light straw yellow with green reflections
Taste
On the palate the Bordeaux Blanc sec Floral with notes of verbena and apple sauce, also chamomile, some stone and pome fruit. The acidity is subtle but persistent, and the wine is developed and mature.
Nose
The 2019 Asphodèle is a ripe wine with notes of floor wax, lots of crunchy apple and some quince, apple peel, lanolin and the scent of lime and acacia blossom.
Taste
On the palate, the wine is spicy and juicy with ripe Sémillon notes of lime and acacia blossom as well as some honey and wax and ripe apple with apple compote. The acidity is subtle and the wine is mature to the point.
