When Aubert de Villaine, co-owner of Domaine de la Romanée-Conti, devotes himself to a grape variety long regarded as Burgundy’s Cinderella, something special emerges. This Bouzeron is precise, mineral and of remarkable purity – an Aligoté that demonstrates what this underestimated variety can achieve on the right soils. Here, terroir speaks louder than the grape itself, very much in keeping with Burgundian philosophy.
Terroir & Origin
Bouzeron is Burgundy’s only appellation dedicated exclusively to the Aligoté grape – a recognition it owes in no small part to the de Villaines. The chalky clay soils of the Côte Chalonnaise lend this wine its characteristic tension and minerality. The cooler microclimate compared to the Côte d’Or preserves the natural freshness and acidity structure that make Aligoté here a serious terroir wine. The 2023 vintage benefited from a balanced growing cycle with moderate temperatures.
Grape Variety & Vinification
Aligoté is often dismissed as a simple bistro grape, yet in the hands of the de Villaines it reveals its true nature: vibrant citrus notes, white flowers and a saline minerality reminiscent of Muscadet or Chablis. Vinification follows traditional Burgundian principles – gentle pressing, natural yeasts and restrained use of oak to avoid obscuring the fruit clarity. The result is a wine of impressive directness and drinkability.
Food Pairing Suggestions
This Bouzeron is the ideal companion to classic Burgundian cuisine: Gougères, Escargots, Terrine de poisson or regional goat’s cheese. The vibrant acidity makes it the perfect partner for oysters, scallops or pan-fried river fish. Also an excellent choice with poultry in cream sauce or Quiche Lorraine – unpretentious yet refined.
