Wine description for Bourgogne “Perrières” Rouge 2017 1500ml Magnum by Clos du Moulin aux Moines
- Colour & Appearance
- A slightly translucent purple with a garnet rim, clear and brilliant – visually already a promise of Burgundian finesse.
- Nose
- Wild red fruit in its purest form: wild strawberry and cranberry, accompanied by rosehip and lingonberry. Beneath lies a subtle spiciness of chopped currant wood, delicate mossy notes evoking truffle, cocoa shell fragments and a hint of pink peppercorns. A nose of quiet intensity – nothing imposes itself, yet everything captivates.
- Palate
- Taut and arrow-straight, like a glass of freshly pressed sour cherry juice. The lively acidity carries the red fruit with energetic clarity, whilst grippy tannins – fine as sandpaper – lend structure to the wine. The judicious use of wooden casks remains discreetly in the background. Already accessible today, it will become fully supple in three years’ time.
- Finish
- Long and precise, with lingering red fruit and a spicy, almost mineral note that cleanses the palate and keeps it alert.
- Terroir & Origin
- From Auxey-Duresses, situated between the famous villages of Meursault and Pommard. The estate looks back on nearly a millennium of history – founded in 962 by monks from Cluny Abbey. The vines are rooted in the calcareous soils of the Côte de Beaune, where Pinot Noir finds its finest, most elegant expressions.
- Grape Variety & Vinification
- Pure Pinot Noir, vinified in classic Burgundian fashion. The grapes ferment in large wooden vats or concrete, with maturation taking place in barriques and increasingly larger casks of around 1,000 litres. New oak is used only sparingly – Willy Roulendes gives priority to the wine’s clear, floral aromas. 12 to 18 months of ageing, depending on the vintage.
- Food Pairings
- Oven-roasted yellow beetroot with mild lentil dhal – the earthy sweetness of the beetroot mirrors the wine’s mossy notes. Pan-fried quail breast with nettle spinach and pumpkin – the delicate spice of the game bird meets the red fruit. Fried red mullet with black pudding and parsley root risotto – a bold yet successful contrast.
- Special Features
- The magnum format grants this wine additional maturation time and developmental tranquillity – the aromatic profile stays fresher for longer, and the tannins integrate more harmoniously. A wine that celebrates Burgundian elegance without ostentation: honest, artisanal, steeped in history. Served slightly chilled at 16°C, it reveals itself at its very best.
