Color:
Bright golden yellow with very active perlage
Nose:
Cuvée Elena from the 2019 vintage oscillates between worlds. Light and dark. Spicy and fresh. Yellow and green. Cold and warm.
The fruit is blessed with a healthy ripeness. The flavour is yellow-fruity and intense. Mirabelle plum, khaki and peach are memorable. At the same time, the fruit is also characterised by a cool finesse. In addition to the fruits mentioned above, delicate herbal flavours are always present. Sage and lemon balm stand out. Fennel and peas also provide a green, more vegetal component. The yeast influences are not so prominent. But they are, of course, recognisable. White pepper, apricot tart and cinnamon can be heard in the background. A hint of sea breeze provides it with a cool freshness.
Palate:
It reveals its full energy and elegance on the palate. The carbon dioxide initially provides a harmonious start. The fruit and flavour come along in step. Then the acidity snaps and reveals its mineral framework. Melissa and sage in particular make their presence felt again and support this stony, cool moment very, very well. Its salty finish clearly reinforces the associations with the sea breeze. And it fluctuates again on the finish. Green and yellow. Ripe fruit and a cool mouthfeel. Cuvée Elena provides a lot of variety.
