Info

The vineyard currently covers almost 100 hectares. 30 hectares are cultivated biodynamically according to the demeter guidelines. The remaining 70 hectares are still cultivated organically. The aim of their current endeavours is to convert 100 hectares completely.

The base wines are fermented with natural yeasts in stainless steel tanks. The second fermentation takes place in the bottle and the wines are then allowed to rest on the lees for 18 months.

Color

Delicate lemon yellow with light greenish reflections, even perlage

Nose

'Alzinar Brut Reserva exudes the origin and characteristics of a contemporary cava. It is strikingly floral and delicately stringed. Camomile, daisy and jasmine give the wine an enormously elegant and delicate side. The fruit alternates between abundant yellow and fewer attributes. Pear, mirabelle plum, white peach and some kaffir lime stand out. It has a cool, stony flavour. Wet chalk and cold smoke clearly leave their mark. The footprints of 18 months on the lees are only faintly recognisable in the background. However, almond plait and butter brioche are always welcome components on the nose.

Palate

On the palate, it leaves nothing to be desired. The mousseux initially builds wonderfully on the palate. Then the acid structure kicks in powerfully. The mousseux is literally cut up. The fruit is pushed further and further into the background. It develops a fine, cool flavour full of herbs, sea spray and oyster shell. Geographically, it feels more like the Atlantic than the Mediterranean, but this is deceptive. The flavours of almond, thyme, lavender and oregano are all the more Mediterranean. Its chalky, mineral and linear side is very well received. Wonderfully clean and refreshing on the palate. The finish is long, cleansing and puristic.
