The luminous golden yellow of Recaredo's exceptional 2015 Rascara shines in the glass and lets copper reflections dance. Its mousseux is characterised by a fine, intense and well-distributed perlage.
This sparkling wine invites the senses on a fascinating journey, spoiling them with characteristic roasted as well as exotic spice aromas such as cinnamon, cardamom and clove. Subtly, but no less grippingly, a hint of brown bread is added. The fragrance is reminiscent of a walk through a Sunday herb garden with notes of rosemary, thyme and eucalyptus filling the room air. With enough oxygenation, Rascara reveals its fruity facets of orange peel, quince jelly and grapefruit.
In the mouth, this drop unfolds a challenging, dense and masculine note with a salty subtlety reminiscent of the taste of noble sherry. The invigorating perlage reinforces this complexity, framed by an intense mineral trail whose persistence is felt long after the first sip. As a meal companion, this Rascara is an experience that redefines the pleasures of the table.
Instead of salsify in liquorice marinade with crispy bread crisps, try parsnips in honey-ginger sauce with a topping of toasted hazelnuts. Instead of grilled sardines with fennel and spiced oranges, a grilled trout with a bed of dill and lemons would certainly be a refreshing option too. A good alternative to oyster-crusted pork tenderloin and P.X -Jus would be roast beef with a crust of mustard and horseradish, served with a sauce of aged red wine.
