Appearance
The luminous golden yellow of Recaredo's exceptional 2015 Rascara shines in the glass and lets copper reflections dance. Its mousseux is characterised by a fine, intense and well-distributed perlage.

Scent
This sparkling wine invites the senses on a fascinating journey, spoiling them with characteristic roasted as well as exotic spice aromas such as cinnamon, cardamom and clove. Subtly, but no less grippingly, a hint of brown bread is added. The fragrance is reminiscent of a walk through a Sunday herb garden with notes of rosemary, thyme and eucalyptus filling the room air. With enough oxygenation, Rascara reveals its fruity facets of orange peel, quince jelly and grapefruit.

Taste profile
In the mouth, this drop unfolds a challenging, dense and masculine note with a salty subtlety reminiscent of the taste of noble sherry. Instead of grilled sardines with fennel and spiced oranges, a grilled trout with a bed of dill and lemons would certainly be a refreshing option too.
