Radiant straw yellow with brilliant reflections – a wine that carries its 25 years with remarkable youthfulness and clarity.

Nose

This Riesling redefines elegance. Rather than relying on power, it showcases multi-layered finesse: Over green apricot hover elderflower, acacia and linden blossom, accentuated by lemon balm and fine linseed oil. Subtle dried fruit complements the complex aromatic interplay, which exudes remarkably vibrant freshness without any note of age. A wine that demands time – decant well in advance! – and reveals itself in constant aromatic transformation over days.

Palate

Here its true greatness unfolds: uncompromisingly dry, with zero residual sweetness, instead displaying creamy texture and saline minerality. Extract of dried green apricots, subtly resinous notes and distinctive maturation characteristics lend it a fascinating edginess. The noble tannin clings persistently to the palate, the supremely fine acidity resonates long and elegantly. Herbaceous in definition, yet extract-rich with sublimely silky fullness and enormous aromatic concentration.

Finish

Saline, cathedral-like resonance with high vibration – a finale that carries the spicy-invigorating complexity of this extraordinary wine for minutes on end.

Terroir & Origin

From the legendary Wachau, from Austria’s oldest wine estate with roots dating back to 63 AD. Managed consistently biodynamically (Demeter-certified) since 1971 – without chemicals, instead using nettle extract, valerian drops and proprietary preparations.

Grape Variety & Vinification

100% Riesling, aged in the historic, hand-carved Fass Severin (3300 litres) from the Roman cellar of Nikolaihof. Second bottling of this vintage, filled in spring 2022 after 25 years of barrel ageing – a cellar treasure par excellence.

Porcini ravioli in sage butter, skate wing with capers and lemon in salted butter beurre blanc, veal fricassée with bread dumplings – this wine demands refined, not overly dominant cuisine.
