Wine profile
The Clemens Busch vineyard holds a real treasure: a tiny cultivation area of just 1,600 square metres of Pinot Noir vines that are almost three decades old. Originally planted for red wine production, these grapes are now the first to be picked during the harvest season. This preserves the crisp freshness and only the best grapes find their way into the cellar. As the basis for the Pinot Noir sparkling wine, it is processed as Blanc de Noir and, after maturing on yeasts for five years, is disgorged in April 2023.

Bouquet
This 2016 Pinot Noir sparkling wine unfolds its personality in a beguiling aroma of small red berries, red apple and apple sauce, mixed with wild herbs and rose hips. Nuances of toasted bread, walnuts, forest leaves and porcini mushrooms mingle with the fine fragrance. Distinctive accents of dried oyster shell and sea air underline its distinctive and extremely elegant character.

Taste
It glides juicily and compactly over the tongue. The fine and long-lasting perlage is perfectly embedded in an exuberant fruit melt. Despite the low dosage, its attack on the palate is charming and fruity-sweet, while the sparkling carbonic acid adds pleasant impetus to the pleasure and conveys multi-layered complexity. An ideal aperitif for the autumn months and an excellent accompaniment to dishes with earthy and nutty notes.

Alternatives for food recommendations
Try it with a baguette spread with pistachio butter and garnished with chanterelles and thyme leaves. It also goes well with air-dried beef ham, accompanied by black truffles, peccorino and partridge eggs. A tender fillet of char, refined with aniseed, apricot and semolina dumplings would also be a suitable idea for abdende bread.
