Wine information
The Les Denisottes vineyard is located not far from the winery in Sury-en-Vaux. It comprises three plots totalling 1.1 hectares of flat land, facing south-east at an altitude of 260 metres. The vines are 40 to 53 years old and are rooted in Kimmerdige limestone. The grapes were harvested and sorted by hand and then pneumatically pressed very slowly. Clarification took place cool and by gravity. The juice was fermented spontaneously and matured on the lees for 14 months in multi-vat wooden barrels. The yeast was only stirred sporadically. Stéphane Riffault avoids malolactic fermentation.

Nose
The Sancerre Les Denisottes has a citrusy, cool and at the same time open and charming fragrance. The nose is reminiscent of zest and the juice of limes and lemons, chalk and limestone gravel, green herbs and a little white blossom. It is no coincidence that a comparison with Chablis 1er Cru comes to mind.
Palate
This feeling continues seamlessly on the palate. The Sancerre from 2022 builds up pressure, is energetic and mouthwatering with lots of salted lemon, zest and an electrifying minerality. At the same time, the wine offers a great deal of finesse in the fine creaminess and silkiness of the texture. Of the three Sancerre sites, this is the wine that offers the highest degree of purism and pulsating energy.
