Location info:

Slight slope with northeastern exposure, the soil is composed of poor red clay and cailotte (small stones), with limestone in the subsoil.

Color:

Bright yellow with clear green reflections.

Nose:

The 2018 Sancerre blanc "Guigne-Chevres" presents itself compact and powerful, almost still a little closed, so off into the carafe with it. Stinging nettle, green pepper, boxwood and blackcurrant leaves make the start. Grapefruit, vineyard peach, lemon zest and firm wood pear join in beautifully. This is "grown-up" Sancerre, which becomes even better with further opening and also storage.

Palate:

Juicy, concise and at the same time fresh it shows on the palate. In the aftertaste it brings some dry pastry and oyster shell. Due to its structure, it loves concentrated and intense dishes.

Food recommendations by Christina Hilker:

  • Risotto Verde with goutweed, wild garlic and bean seeds
(Pasta, Pizza, Polenta & Risotto, Vegetables & Vegetarian)
  • Salmon roasted on a spinach mat with rutabaga gnocchi and nettle butter
    (Fish)
  • Lamb chop with paprika vegetables and herb butter
    (Meat)
