The precious grapes of this wine come mainly from Karthäuserhofberg, while a precise selection also comes from Mertesdorf and Waldrach to bring together an exquisite diversity of the individual terroirs of Karthäuserhof in this balanced estate wine.
With regard to the pressing process, the grapes are carefully harvested by hand and then gently pressed. Controlled fermentation takes place in stainless steel tanks, after which the wine is allowed to mature on its full lees for around six months.
The colour of this wine is reminiscent of a dazzling light golden yellow that immediately captivates the eyes. As the aromas unfold, one first notices the unmistakable presence of slate spice in the 2021 Schieferkristall Riesling vom Kartäuserhof. Aromas of crumbly apples and dried pear wedges come to the fore, accompanied by subtly yeasty notes and hints of bread crust. With sufficient oxygenation, subtle accents of grapefruit, some vineyard peach, dried herbs and orange peel come through. Particularly notable is the absence of overly fruity flavours, which puts the focus on the wine's maturity.
The flavours of this wine are also defined by a distinctive spicy aroma, combined with refreshing acidity and full-bodied juiciness. With a decent alcohol content of 11 vol%, this Riesling logifixes itself as an excellent aperitif and palate pleaser of hearty, earthy-dominant dishes.
For connoisseurs looking for a suitable food accompaniment, I would suggest the following dishes: Roasted beetroot and Bosc pear with wild herbs, onion quiche with smoked salmon and veal pâté with orange zest, dill, oregano and lavender.
