The colour presents a depth of violet-red, contrasts set off in black at the heart of the wine and the density of colour reaches the outer edge.
The impressive 2019 Le Grand Rouge de Revelette shows opulent fruit presence, depth and a cool minerality. Blackberries alternate with sloes and sweet cassis, with the finest chocolate flowing on top, followed by wood smoke and a chorus of herbs, including rosemary and thyme, with a noticeable hint of pepper and juniper. A breathtaking olfactory experience!
It coats the tongue with mineral grip and its gentle fruity note and light fruit sweetness make it particularly charming. Its tannin and acid structure testify to finesse and give it a vibrant liveliness that it shares with all of Peter Fischer's wines. A delight with slow-cooked dishes and barbecues, a wine that evokes a longing for southern France, its gastronomy and hospitality!
Take a look at a rustic white bean soup recipe enriched with potatoes and oregano. A bacon-wrapped pheasant breast served with Brussels sprout leaves is another possible accompaniment. If it has to be grilled, lamb chops marinated with Provence herbs and olive oil are a good choice.
