Background info on the drop
It may come as a surprise, but the Chasselas grape variety, often called Chasselas, can be found right along the Loire. It used to be widespread in many parts of France and you can still find it even in today's Languedoc. The Pouilly-sur-Loire appellation values it as the main white grape and allows small amounts of Sauvignon Blanc to be blended in. Antoine Gouffier conjures up a varietal Chasselas from the grapes of a vineyard in St. Andelain. A light standing time for the grapes, spontaneous fermentation after pressing and maturation in stainless steel barrels are his credo. With just 4 mg/l filling sulphur, this wine is a rarity.

Olfactory notes
This Chasselas Mon Village is a spicy wine that holds delicate notes of quince, apples, apple peel and carambola, while hints of lime blossom, chamomile and herbs buzz in the background.

Taste impressions
It spreads on the palate - spicy, aromatic with a hint of mellow stone fruit and peel, along with a hint of liquorice. A warming radiance, which is difficult to find in the Sauvignon Blancs of the same vintage, pervades the Chasselas. One could almost think that it had dampened the coolness from the previous year. The Chasselas is sensual, clear and balanced - a pleasing acid structure and a light grip characterise it. A delicious find!

Food recommendations
Green asparagus coated in light panko breadcrumbs and deep-fried, served with a wakame mayonnaise. Camembert cakes with a touch of thyme. Raclette cheese from Alpensektor, served with special potato varieties from the French highlands.
