White wine information
As a counterpart to Du Bouchot Terres Blanches, the vines of the MCMLV edition also thrive on the "Terres Blanches", characterised by white clay, marl and Kimmeridge limestone, mixed with rich oyster sediments. Certified organic since 2009 and biodynamically cultivated since 2015, the Sauvignon grows proudly on the plots of Les Coûtes and Les Sapins, spread over a total of 0.46 hectares. They come from vines that are more than 60 years old and represent the oldest vineyard of the domaine.

Fragrances
The 2020 Pouilly Fumé MCMLV unfolds a magnificent bouquet on the nose. Gooseberries, figs, lemon, lemon zest and grapefruit on a flinty stage complemented by a hint of fresh sea breeze. Notes of iodine and soy sauce create an additional umami effect that awakens the culinary senses from the very first scent.

The white wine virtually glides over the tongue - juicy, melting, rich and yet with a spicy meatiness and invigorating acidity. An extract-rich wine that simultaneously enchants with its coolness and finesse. It virtually demands culinary accompaniment. It unfolds an amazing depth and intensity, which makes it a unique drop!
New dishes for the menu
A fresh salad of quinoa and avocado with smoked salmon in a duet with lemon dressing. Rondini spaghetti with herb sauce garnished with grilled gilthead and aromatic basil. For an Asian touch, try wan tans stuffed with chicken, baby bok choy, shiitake mushrooms and a light sesame sauce.
