Info about the wine
Sauvignon Blanc from the Caillottes, i.e. Calcaire à Astéries from fossil starfish as well as the Calcaire de Tonnerre, originally a very hard limestone that has weathered into a sponge-like porous limestone. The Sauvignon, which has been certified organic since 2009 and biodynamically cultivated since 2015, stands in the plots Les Papillons, Les Petits Papillons, Les Chantalouettes and Vaurigny on a total of 1.68 hectares. The age of the vines is 35 to 40 years.

Light straw yellow.
Nose
On the nose, the 2020 Pouilly Fumé Caillottes shows charming bright fruit reminiscent of pear, yellow applesauce, peach and quince compote. It appears elegant and almost gentle and has a closed, fine and subtle effect. Hints of anise, celery and privet round off its silky, multi-faceted and elegant attack beautifully.
Palate
On the tongue, it confirms its silky elegance, which is complemented by an animating freshness and invigorating acidity that increases the drinking flow. In the long finish, it gets a clear freshness kick and seems almost cool. A wine that has an inherent magic, that is beautifully Burgundian and that forms the most beautiful symbiosis with this cuisine.
