Wine Description for Riesling Baumpresse 2015 from Nikolaihof

Colour & Appearance
Pale golden yellow with luminous brilliance – a hue that elegantly reflects eight years of bottle maturation.
Nose
A profoundly moving Riesling that captivates immediately with its understated depth. Ripe yellow stone fruit and stone fruit meld with calamansi cream, lanolin and fine mineral nuances. The ripe white and yellow flowers characteristic of mature Riesling complete the bouquet – already in the aroma, a meditative experience.
Palate
On the palate, the pleasure continues seamlessly. The fruit presents itself as white and yellow-fleshed with subtle citrus notes and pronounced spicy-herbal character. The acidity feels silky and mature, whilst deep minerality provides remarkable tension. Elegance and finesse define this wine – a Riesling of dignified maturity that invites one to set the pen aside and surrender to contemplation.
Finish
Long, mineral-driven and characterised by spicy complexity. The fruit fades gently whilst the minerality lingers persistently on the palate.
Terroir & Origin
The grapes hail from the Wachau, grown on loam, loess and paragneiss soils – a soil combination that lends the wine its characteristic depth and minerality.
Grape Variety & Vinification
The Riesling was pressed in 2015 using the 350-year-old wooden press for more than ten hours – a traditional, gentle process that imparts the wine’s distinctive texture. After 18 months of maturation in a large 2,000-litre wooden vessel, it was bottled and aged further in bottle before being released for sale in 2023.
Food Pairing Recommendations
Porcini ravioli with Parmesan foam and crispy sage, napkin dumpling lasagne with sautéed wild mushrooms or steamed poussin with truffles – this Riesling demands refined, yet uncluttered cuisine.
Special Characteristics
A wine from the biodynamically-farmed Nikolaihof, embodying the patience and craftsmanship of traditional winemaking. The historic wooden press and the late bottling in 2023 underscore the estate’s philosophy: wines that require time and bestow time.
