Storm the castle. Free the native varieties and send them on an adventure, almost like going to Manila. They come back.

Very dry spring, no winter moisture, virtually no rain until June. Hot July and August, weak growth, also delayed ripening due to dryness, beginning of harvest at the end of August. More concentration in the wines due to small berries.

Manila white is a wild tangle of 55% Grüner Veltliner, 23% Welschriesling and 22% Weißburgunder.

The Grüner Veltliner is foot-stomped and whole grapes are crushed. After five days on the mash in stainless steel tanks, it is then pressed. Welschriesling is completely destemmed and ferments exclusively in stainless steel tanks. The Pinot Blanc is also completely destemmed and ferments in 1500l wooden barrels. The cuvée then ferments and matures in steel tanks until bottling and any fining or filtration.

At a slim 11.5% vol. it is a very contemporary drink.

Nose

The nose seems wild and yet coherent. Kaffir lime leaves as well as plenty of rubbing of these and bergamot flow wonderfully intense from the glass. Ripe pear and some quince compote. The peel of yellow apples brings freshness and a tart spiciness into play. Nettle and wild herbs provide a certain ethereal spiciness. This is supported by marjoram and tarragon. Mirabelle and peach make an appearance with a little temperature. Artichoke and fennel then slowly make themselves known and finally dominate it in their vegetal yet very inviting way.  

Palate

On the palate, it immediately reveals its enormous balance. It appears slender and taut. The fruit does find its place in the core, but is kept within narrow bounds. Manila 2022 succeeds in bringing its wild character to life in a way that is enormously suitable for everyday use. A dark, balsamic spiciness clearly marks it in the aftertaste, but does not disturb the drinking flow at all. It is uncomplicated and yet appealing on the palate.
