Colour & Appearance
Rich straw yellow with apricot-coloured reflexes and lively, persistent perlage – a visual harbinger of the maturity and complexity this Champagne promises.
Nose
Fascinatingly multi-layered: roasted hazelnuts and salted almonds meet buttered brioche and salty pastry. Beneath shimmer citric nuances of mandarin oil and Cedro lemon, hinting at maritime freshness and an almost iodine-like minerality – Kimmeridge chalk makes its presence felt.
Palate
Lively, creamy mousseux carries a surprising fruit palette: raspberries and lingonberries meld with kumquat and orange marmalade on buttered toast. The vibrant acidity is accompanied by saline oyster shell notes, lending the wine precision and depth. Medium body, but great pleasure – a Brut Nature that doesn’t miss its dosage of merely 2.7 g/l.
Finish
Persistently fresh with saline minerality and a lingering echo of citrus peel and roasted nuts. The acidity remains present without being intrusive – elegant and appetite-awakening.
Terroir & Origin
The Côte des Bar, the southernmost corner of Champagne, reveals its kinship to Chablis here: Kimmeridge limestone and marl with clay overlay characterise the vineyards. This geological peculiarity lends the Champagne its characteristic saline minerality and tension.
Grape Variety & Vinification
A classic assemblage of 50% Chardonnay and 50% Pinot Noir. The base wines ferment in barrique, which explains the nutty, roasted notes, before being blended in stainless steel. Disgorged in March 2024 – young, but already accessible.
Food Pairing Recommendations
Oysters and seafood are the obvious candidates. Equally excellent with smoked salmon, scallops with hazelnut butter or goat’s cheese tartlets. The saline minerality also harmonises beautifully with tempura or fried sardines.
