Wine Description for JZ. Revolution red solera N.V. by Johannes Zillinger

Colour & Appearance
Medium, slightly transparent ruby red – youthful and inviting in the glass.
Nose
Still rather reserved and closed, the nose presents blackberries, dark cherries and an intriguing hint of beetroot. These are joined by earthy notes, straw flowers, bay leaf and a mineral touch of stone – an aromatic profile that promises depth and complexity.
Palate
Here the Revolution reveals itself in all its freshness: taut, cool and dry, with a subtly yeasty, silky texture. The agile acidity drives the wine forward and underscores the juicy dark berry fruit. The tannin is fine and grippy, never dominant. Herbal-spicy notes lend the wine character, whilst the dryness provides tension.
Finish
Pleasantly dry and fresh, with a distinct fingerprint of Cabernet Franc, which becomes particularly present in the finale and provides a clear, straightforward conclusion.
Grape Variety & Vinification
An unconventional cuvée of Zweigelt, Cabernet Sauvignon and Rösler (or according to tasting notes: Cabernet Franc, Merlot and Roesler) from vintages 2018-2021. The Rösler was pressed as whole bunches, the Merlot fermented as whole berries, the Cabernet briefly fermented in open vats. Aged in old 500-litre oak barrels and stainless steel. Bottled in February 2024 with minimal 25 mg total sulphur – natural wine philosophy at its purest.
Food Pairing Suggestions
A versatile companion to beetroot terrine with summer savory, Brussels sprout tempura with beetroot and ginger salad or green enchiladas with tomatillos and chicken. The wine’s dryness and freshness harmonise perfectly with earthy vegetable dishes and spicy flavours.
Special Features
The solera method – traditionally known from sherry production – lends this wine its particular complexity. With this Revolution, Johannes Zillinger proves that everyday wines far removed from the mainstream are not only possible but also exciting. A lively, quaffable red with a biodynamic background and just 12.5% alcohol – perfect for the modern, conscious wine enthusiast.
