Character
A classic Gevrey-Chambertin from the house of Trapet, which ranks among the most tradition-rich and reliable addresses on the Côte de Nuits. The vintage 2015 produced exceptionally ripe, concentrated wines in Burgundy – warm, sun-blessed and yet of remarkable depth and structure. The Cuvée Ostrea – named after the fossilised oyster shells in the soil – is an expression of this terroir in its purest form: powerful, yet never ponderous, with the unmistakable character of northern Burgundy.
Terroir & Origin
Gevrey-Chambertin is regarded as the most muscular and masculine commune of the Côte de Nuits. The calcareous, iron-rich soil – here with a high proportion of Ostrea fossils, petrified oyster limestone from the Jura – imparts a mineral austerity and earthy depth to the wines that few other appellations can match. The name of the cuvée is thus no mere poetic flourish, but a geological statement: the soil speaks directly into the wine. The warm, dry year of 2015 ensured optimal ripeness whilst preserving the interplay of acidity.
Grape Variety & Vinification
Trapet Père & Fils has been farming biodynamically for years – an approach that allows maximum expression of terroir and consistently avoids synthetic intervention. The Pinot Noir, that most delicate and yet most expressive of all red wine varieties, is vinified at Trapet with great artisanal respect. Ageing in oak barrels serves to structure the wine, not to aromatise it – the wood recedes, the terroir comes to the fore. At 12.5% alcohol, the wine displays a remarkably elegant balance for 2015.
Food Pairing Suggestions
A wine of this origin and maturity demands dishes with substance and depth. Classically it harmonises beautifully with Coq au Vin, braised lamb shoulder or wild boar ragout. Equally impressive is its pairing with aged Burgundy cheeses such as Époisses or Comté. For those who prefer a more purist approach: a simple roast beef with jus allows the wine to speak entirely for itself.
