The grapes for this unique sparkling wine come from the idyllic regions of Kamptal and Thermenregion. Elegant and complex varieties such as Zweigelt, Pinot noir, Chardonnay, Pinot blanc, Pinot gris and Grüner Veltliner were selected for the exclusive cuvée. Handpicked and carefully placed in 20 kg boxes between early and mid-September 2015, the harvest reflects the attention to detail and quality.
After a whole cluster pressing, which produces about 50 litres of juice from 100 kg of grapes, the juice pre-clarifies for about 40 hours before undergoing a wild fermentation at 18 to 22 ºC for two to four weeks in steel tanks. After half a year on its fine lees, the cuvée was bottled in June 2016 and remained there until January 2018. Traditional hand-riddling and the addition of 2g/l dosage and around 20mg/l SO2 before bottling and 15mg/l at disgorgement complete the meticulous process.
Lemon yellow in its brightest form plays with the foaming mousseux and invites you to enjoy it.
The nose is elegantly caressed by notes of yeast dumplings and a hint of brioche, complemented by the fragrance spectrum of yellow-orange citrus fruits and white-fleshed pome fruits. Floral and slightly tart herbal notes accompany this cocktail of fragrances, which, despite its expressiveness, presents itself as refreshingly cool and taut, yet thoroughly ripe and juicy.
On the palate, the interplay of coolness and astringency continues. The sparkling wine presents itself with bite and an impetuous freshness that evokes a dry impression. At the same time, there is a remarkable pressure on the palate, which is led by a delicate mousseux and the ripened fruit to an impressive elegance and finesse. It remains taut until the long finish, with a slight saltiness and again tart herbal notes. A true pleasure that gains in complexity with each further viewing in the glass.
Harmonises perfectly with oysters wrapped in smoked bacon or with grilled lobster in spicy piment d'Espelette butter. Country bread with goat's cheese or served with light, crispy choux pastries also allow the sparkling wine to unfold its full spectrum.
