- Colour & Appearance
- Bright, luminous straw yellow with golden hues and subtle green reflections – a wine that already hints at its maturity and concentration in the glass.
- Nose
- This Xarel·lo presents itself seductively intense with ripe, yellow stone fruit. Apricot dominates, flanked by mirabelle plum and peach. Added to this is orange in all its facets – flesh and zest alike, herbal and fruity in interplay. Despite the opulent fruit, freshness remains: yeast notes and a distinctive salinity set precise accents. Traces of ageing in well-used barrique reveal themselves through juniper and sage, which lend the wine profound spice and ethereal freshness.
- Palate
- The attack is explosive: juicy and silky at once, the intense fruit unfolds in full splendour. A subtle creaminess is enveloped by fine tannins, which give the wine a forceful character. The spicy notes of juniper and sage return and structure the palate with precision.
- Finish
- In the aftertaste, the fruit drifts towards the exotic and recalls passion fruit. Distinctive bitter notes form a clear, supporting backbone – a finish of impressive length and complexity.
- Terroir & Origin
- The legendary vineyard site Vinya dels Taus was planted with Xarel·lo in 1945 and forms the genetic foundation for Enric Soler’s entire project. Just 0.65 hectares in Sabanell in Alt Penedès, protected by the spectacular Montserrat mountain range, benefit from Mediterranean influence and cool downslope winds. The 2021 vintage was characterised by extreme contrasts: cold, dry start to the year, early budbreak, summer heat and decisive rainfall at the end of July, which gave the vines renewed vitality.
- Grape Variety & Vinification
- Old Xarel·lo vines from 1945, painstakingly recultivated. Aged in well-used barrique. Unfiltered and unrefined – an uncompromising approach that gives the wine extraordinary depth and texture.
- Food Pairing Suggestions
- With roasted turbot in saffron sauce, scallops on pea purée, sweetbreads with morels or mature hard cheese such as Manchego. The structure and spice also harmonise beautifully with grilled swordfish or mushroom risotto.
