The Crémant d'Alsace Sans Soufre is a cuvée of white Burgundy, Auxerrois and Chardonnay. Grown at the foot of the municipality of Katzenthal on marl and limestone soils, the grapes are harvested by hand and the whole grapes are then gently pressed pneumatically for six hours. The wine is neither chaptalised nor acidified and is fermented spontaneously with its own yeasts in temperature-controlled vats. The base wine then matures in barrels on the fine lees until it is bottled. The wine remains on the lees for at least 12 months before it is disgorged. No sulphur is added either during ageing or after disgorgement.
