Wine Description for Bourgogne Rouge „La Taupe“ AOC 2021 by Chavy-Chouet

Colour & Appearance
Medium cherry red in the glass – classically Burgundian, transparent and inviting.
Nose
This 2021 surprises with darker aromatics than expected: black cherries and sour cherries dominate, accompanied by cranberries and a hint of wild strawberry. Beneath lies a fascinating earthy-spicy layer with notes of undergrowth – a harbinger of the Pommard character.
Palate
Here the 2021 vintage shows its best side: fresh, acid-driven and of remarkable clarity. The dark berries and cherries from the nose continue on the palate, framed by subtly deployed oak that provides structure without dominating. Particularly appealing is the slightly wild, rustic note that recalls its Pommard origin – authentic, earthy and with pleasant grip.
Terroir & Origin
The vineyard La Taupe lies directly adjacent to the legendary Château de Pommard and is home to 70-year-old vines on two hectares. The historical planting density of 10,000 vines per hectare ensures natural yield reduction and concentration – a treasure of Burgundian winemaking tradition.
Grape Variety & Vinification
100% Pinot Noir, aged for ten months in Burgundian Pièces with restrained 10% new oak. This vinification respects the fruit and gives terroir pride of place – this is how modern Burgundy should be.
Food Pairing Suggestions
The combination of freshness and earthy depth makes this wine the ideal companion for Coq au Vin, duck breast with cherry sauce, grilled lamb rack or a mature Époisses. Also an excellent choice with mushroom dishes and game terrine.
Special Features
A Bourgogne Rouge that points far beyond its appellation – thanks to its exceptional terroir and old vines, a genuine insider tip for Burgundy lovers who appreciate authenticity and value for money. The 2021 vintage brings precisely the tension and vibrancy one could wish for.
