Information about the drop
Nestled in an "amphitheatre" facing the ocean, the vines stretch up for the 2019 Pibarnon Bandol Rouge, a masterful blend of 90 % Mourvèdre and 10 % Grenache. Due to their privileged location on soils of clay, limestone and chalk dating back to the Triassic, these vines prove to be the chosen ones for this storable wine. For the production of this wine, only the best is drawn from the old vines, which are located at an average altitude of 250 metres above sea level. After a three-week fermentation phase, the wine is matured in individually adapted barrels from various countries of origin for a period of 20 months.

Color
It presents itself with an intense, opaque violet red that runs through to the end.

Scent
The 2019 Château de Pibarnon Rouge exudes a true sensory experience. It lures us in with an enticing combination of sweet blackberries, dark cherries, blackcurrants, elderberries and lovely wild raspberries paired with earthy notes such as tree bark, liquorice and leather. The palette is rounded off with hints of cocoa and roasted herbs such as rosemary , thyme and juniper.

Palate
Graceful and comprehensive, it spreads out on the tongue. Peppery and sweet cassis notes mingle with inexpressive tannin and a lively acidity. An impressive red wine, which is a sensual counterpart to strong, wild dishes due to its simultaneously raw and elegant charisma.

Food recommendations
Serve this wine with a pancake filling of Fourme d'Ambert cheese and blackberries topped with a salad of fresh wild herbs. Also try the delicate combination of pigeon with an orange-pistachio hollandaise and deep-fried beetroot chips. Another option for your guests would be the hearty wild rabbit accompanied by a porcini risotto with thyme.
