Wine information
Asphodèle is the first dry white wine in the history of Château Climens. It is a wine made from 100 % Sémillon from red clayey sand and limestone and thus from the unique terroir of Climens. It has been produced biodynamically since 2010 according to demeter-certification. Around 45 hectolitres per hectare were harvested. The vines are around 15 years old and were planted at a density of 6,000 per hectare. The wine was matured for nine months in cement tanks.

The 2020 Asphodèle is a young Sémillon that smells of camomile and buckwheat, ripe peonies, fresh and crunchy apples as well as some beeswax and lanolin.
Taste
On the palate the Bordeaux Blanc sec Floral with notes of verbena and apple sauce, again of camomile, as well as some stone and pome fruit. The acidity is subtle but persistent, the wine is developed and mature.
