Wine information
The name of the vineyard Côte aux Prêtres, Hill of the priests, refers to the nearby pilgrimage route from Vézelay to Santiago de Compostela. The spectacular vineyard is situated on a hill, and this has a dome that is exposed to the sunlight and the wind. The soil is strewn with many small Kimmeridge limestones. After hand harvesting, the grapes were gently pressed and fermented spontaneously for a long time. The wine was Côte aux Prêtes in tanks and large wooden barrels, maturing on the fine yeast After maturing, the Chablis unfiltered and unadulterated with only a slight addition of sulphur.

The Côte aux Prêtres 2021 is fragrant, clear and pure with crushed rocks, herbs and the juice and zest of Cedrat and Amalfi lemons. It is a ChablisThe fragrance itself is electrifying and exciting, especially as the warmth is accompanied by a very fine hint of wood and nougat.
Palate
On the palate the Côte aux Prêtres equally exciting and electrifying. Here, too, it offers a deliciously salty character with lots of citrus fruits in yellow and green, but also a little wood, a hint of nougat and a slightly creamy texture. Overall, however, the vintage is extremely pure, electrifying and savoury. It pulsates and moves in waves across the palate again and again.
