The Valpolicella Classico is a cuvée of 70 % Corvina, 20% Corvinone and 10% Rondinella and Molinara. The grapes for this wine come from the historically classic zone of Valpolicella with clayey, calcareous soils with tufa and skeleton-rich stones and rock layers. The vineyards are located in the hills of Valpolicella at an altitude of 150 to 300 metres above sea level with an east/south-east exposure.
This Valpolicella is fermented spontaneously with its own yeasts in stainless steel at a maximum temperature of 25 °C. The maceration period after fermentation lasts seven days, after which the wine matures for a further five months on the fine lees.

Nose
The 2022 valpolicella from Ca la Bionda also has a transparent and uncluttered appearance on the nose. The clear cherry streams out of the chalice as an olfactory leitmotif and is accompanied by 50 different variations on this theme. This is accompanied by contoured, tart notes reminiscent of herbs such as laurel and mild spices.
Mouth
Silky and elegant on the palate, it is the antithesis of the region's current leitmotif of extraction and concentration. Rather, this wine proves that finesse is not a sprint, but a marathon, which it is capable of running thanks to its delicate stature and delicate finesse. The sparkling ruby-red cherry is framed like a jewel by the silky, animating tannins, while the ripe acidity picks up the pace and leads it straight to the finish line.
