Wine information
The wine comes from sites mainly on the Côte des Nuit. The vineyards are organically cultivated. After destemming, cool pre-fermentation and spontaneous fermentation, the wine is aged slowly on the fine lees for 18 months in 228-litre barriques with a new wood content of less than 20 %.
Color
deep ruby red, almost opaque
Nose
If you are surprised at the beginning by a rather lactic nose accompanied by quite a lot of gunpowder and almost unripe-looking berries, you should give the wine plenty of air. Then it develops into a balanced fruit with cassis and blackberries as well as many herbal notes. On the nose and later on the palate, the wine seems as if rape had been fermented, but Yann Charlopin had completely destemmed the grapes.
Palate
On the palate, the wine also needs a lot of air. Then it appears concentrated without being over-extracted. The deep colour does not come from too much extraction, but from the cool pre-fermentation. The wine offers much, much Pinot fruit with sour cherries and black cherries, with some wild berry confit as well as herbs with a discreet classic use of wood. In the finish, the wine also appears stony and reminiscent of cherry stones.
