Wine information
This wine from Boris Champy comes from a vineyard with an old Sélection massale the Aligoté Doré or Golden Aligoté. The attribute naturally refers to the colour of the berries. The plots are located in the Hautes-Côtes de Beaune at an altitude of over 400 metres. The soils are interspersed with limestone, calcareous marl and clay. The vines were planted very densely with 10,000 vines per hectare and trained in Guyot and Lyra. Their grapes were the last to be harvested on 10 October - ten days after the Hautes Côtes vineyards. The spontaneously fermented wine was aged for twelve months at 70 % in used barrels. Pièces on the yeast and aged to 30 % in stainless steel.

Nose
Boris Champys Burgundy Aligoté Doré 2021 offers a rather subtle aroma of honeysuckle, a little lanolin, yellow pear and some crunchy apple. Behind this lies a bright, citric fruit, but also a certain fullness of pomaceous fruit.
Palate
On the palate the Aligoté lean and restrained with lots of salted lemon, grapefruit and a hint of pear and iodine. It is a wine that is electrifyingly fresh and mineral. The Bourgogne Aligoté exerts a lot of pressure, doesn't have an ounce too much fat and remains very athletic right through to the final.
